Description

The Story

At the southern end of the Barossa near Mount Crawford there is a magnificent property established over 150 years ago, the entrance marked by two grand pillars - Corryton Park. One of the highest and coolest sites in the Barossa region, it provides perfect conditions for creating world class Cabernet with finesse, depth and complexity.

The Fruit

‘Fruit was sourced predominantly from the Corryton Park vineyard in the high country of the Southern Eden Valley. This is Barossa varietal Cabernet Sauvignon at its best, showcasing the very cool location of this vineyard’, Craig Stansborough, Chief Winemaker.

The Winemaking

Fermented in stainless-steel static fermenters for eight-to-ten days with 20% of the fruit left on skins for twenty five days. Fermentation temperatures reached 28°C. Pump overs were performed four times-a-day with reduced pump overs towards the end of fermentation.

The Wine

The 2018 Corryton Park Cabernet Sauvignon is medium deep with a distinct boysenberry colour, with a vibrant nose displaying distinct Barossa Cabernet characteristics. Anise, cassis and dark mint chocolate are evident upon first swirl with a gentle shade of lifted boysenberry toward the back of the glass. There is an elegance and poise on the palate distinctive of this vineyard and the vintage. Beautiful tannin coats the mid-palate with a touch of coffee bean and gingersnap on the finish. Oak and acidity are brilliantly balanced showing a wine with exceptional cellaring potential.
