The colour is deep purple with crimson hues. The bouquet is abundant with fresh plum, mulberry and red cherries, coupled with hints of mocha and vanilla.
PALATEThe palate is luscious and shows generous fruit flavours of raspberry and plum and complex notes of vanilla bean and dried herbs. File silky tannins give structure and length, creating a seamless and approachable wine.
Cellar 5-6 years.
Deep purple/red with blackberry and blueberry aromas, earthy tones and spicy notes. An elegant expression of dark fruit with layers of berry, spice and smoked meat flavours.
Fermentation with submerged cap took place in small, stainless steel fermenters. Some batches had up to two weeks on the skins. The wine was then 100% barrel matured for 20 months in 80% new fine grain French oak and the balance in two and three year old French oak hogsheads (300 litre). Some batches finished fermentation in new barrels. The wine was kept for a year in bottle before release.

The nose is brooding and alluring, earthy notes combined with dark fruits, fennel and baking spice. The palate is dense and concentrated with plum, blackberry, mulberry, earth, iodine and black olive characters. Despite the richness and intensity of the attack and mid palate the experience crescendos with a lick of spicey pepper, coupled with lovely, fined grained tannins. Complex, savory and moreish!
Nose Concentrated blackberry liquorice and blood plum. Subtle notes of lavender, sage and elegant use of oak, add an extra dimension of rich complexity and intensity
Palate Dark fruits of blackberry and liquorice are supported by red currant and stewed rhubarb. Fine powdery tannins frame the well balanced core of fruit, adding texture and length. Elegant use of oak and soft dark generous fruits give this wine support, direction and youthfulness.
Nose The nose is dark and concentrated with aromas of black fruits and spice. Dark cherries and blackberries are elevated with nutmeg, pepper and subtle violets.
Palate The palate is deep and lush, offering concentrated dark cherry and mulberry, elegant cedar and spice. Tannins are firm and precise complementing the fruit through the mid-palate, leaving the finish with bay and rhubarb.
Nose Rich notes of blackberry and black olive. Elegant red cherry and subtle florals complement the bouquet. Hints of cedar and cassis add layers and finesse.
Palate Concentrated blackberry, licorice and coffee flavours at the base of the palate, with bright red cherry and violets on the mid-palate. Balanced, ripe tannins, fine oak handling and moderate structure add seamless length
Nose Bright and alluring with concentrated aromatics of rose and forest floor, accentuated by subtle dried lavender and white sage.
Palate Juicy, lush and generous, layered with dark rich brambles of blackberry, cherry, plumb and moss. The wine is enhanced by succulent acid, fine cedar and elegant tannins, leading to beautiful depth and length, creating a wine of harmony and poise.
Maturation took place in new (60%) and second-fill French oak barriques for eighteen months, before final blending and bottling. A classic Coonawarra Cabernet from a strong vintage.

The Merlot was held on skins for ten days for fermentation, prior to pressing and filling to fine-grained French oak barriques, (50% new, 50% second-fill), for a total of nineteen months barrel maturation.
